Grilled Mahi Mahi with Chimichurri Sauce

Grilled Mahi Mahi with Garden Herb Chimichurri

Ingredients for Mahi Mahi

  • 2 mahi mahi fillets
  • 3 tablespoons lemon juice
  • salt and pepper, to taste
 

Ingredients for Chimichurri Sauce

  • 1/2 cup of parsley, large stems removed
  • 4 cloves garlic
  • 1/2 cup cilantro
  • 1/4 cup oregano
  • 1 teaspoon crushed red pepper
  • salt and pepper, to taste
  • 1/3 cup olive oil
 

Directions

In a blender or food processor combine all ingredients for chimichurri. Puree until finely blended. Pour lemon juice over fillets and season with salt and pepper. Grill fillets for 10- 15 minutes, or until fish is pearly white and flakes easily with a fork. Remove and top with chimichurri sauce.
